Sausage and Egg Casserole with Sun Dried Tomatoes

  • 1 pound Italian sausage
  • 1/2 cup chopped green onion
  • 2 garlic cloves
  • 1/2 cup sun dried tomatoes
  • 4 tbs parsley
  • 5 large eggs
  • 3 large egg yolks
  • 1 cup half and half
  • 1 cup whipping cream
  • 2 cups grated mozzarella cheese
  • 1/2 tsp salt

Step 1

Preheat oven to 375

Butter 13x 2 inch baking pan
Saute sausage in skillet until brown
Add onion and garlic and sautee three minutes. Add sun dried tomatoes and parsley stir one minute. Spread mixture in prepared pan.

Whisk eggs, yolks, half and half, whipping cream, 1 1/2 cups cheese and salt in large bowl to blend well. Pour egg mixture over sausage mixture. sprinkle remaining cheese and 2 tbs. parsley over. Bake until casserole is golden brown and knife comes clean, about 30 minutes. Let stand five minutes before serving.
