Ingredients
- 1/2 lb Italian sweet Sausage
- 1 tbsp olive oil
- 1 cup diced carrots
- 1 clove garlic,minced
- 1 cup diced onion
- 1 tsp basil
- 2 zucchini ,sliced
- 2 10oz cans beef bouillon
- 2 soup cans water
- 1 lb Italian tomatoes
- 1/2 cup rice
- 1 lb white kidney beans
- 1/2 cup red wine
- salt and pepper to taste

Preparation
Step 1
Ahead of time slice sausage crosswise and brown in olive oil in deep saucepan or Dutch oven. Add onions,carrots,garlic and basil. Cook 5 mins.Add zucchini,tomatoes with liquid,water,salt and pepper. Bring soup to a boil. Reduce heat and simmer covered for 1 hour.Add beans with liquid,rice and wine. Cook 20 mins until rice is done. Top with parmesan cheese. Best served with french bread.
