Ingredients

  • 2 sprigs parsley
  • 1 large onion
  • 1 1/2 lb. baby beef liver (sliced)
  • 1/2 c. flour
  • 1 tsp. salt
  • 8 slices bacon
  • 2 tbsp. butter
  • 1 tsp. tarragon
  • 1 tbsp. lemon juice
  • 1/4 tsp. pepper

Preparation

Step 1

Chop onion and parsley fine.
Coat liver with flour, salt, & pepper.
Fry bacon until crisp. Fry liver slices in bacon drippings until browned on both sides. Transfer liver and bacon to warm platter.

Melt butter in friying pan. Stir in chopped parsley, onion, & tarragon. Cook until tender. Add lemon juice and pour over liver.
