Ingredients

  • 1 egg

  • 1 cup brown sugar

  • 1/2 cup shortening

  • 1 tsp salt

  • 1 cup buttermilk

  • 1.5 cup diced rhubarb

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

Directions

Beat the egg. Beat in brown sugar, shortening and salt. Stir in buttermilk, then rhubarb. Sift flour, soda and cinnamon together and then into the mixture. Stir only until all flour is moistened. Spoon into 12 buttered and floured muffin cups, and bake at 375°F for 20 minutes. With frozen rhubarb, bake a little longer. These freeze well.
