Enchilada, ala Diane

This is Diane's recipe from early on in her marriage. Can make just plain, e.g., with cheese, or add chopped, leftover chicken.

Ingredients
- Heat til near boiling the fo0llowing:
- Grate 1 1/2 bars longhorn cheese
- 1 can cream chicken soup
- 1/4 can water
- 1 small can diced green chiles
- (you can also add chopped leftover chicken if you want)
- Chopped green onions
- 1 pint sour cream.
Preparation
Step 1
Put flour tortilla in hot oil til it begins to puff. Remove to paper towel.
Work with one at a time. In center, place 2 spoons mixture and generous handful of cheese.
Fold in edges and roll (tortilla, that is - just wanted to see if you can follow directions).
Place in casserole, pour remaining sauce over top. Bake at 350 25-35 min.
Serve topped with chopped green onions and sour cream, if you wish.
