CHICKEN OVEN FRIED SPICY ITALIAN FINGERS

Ingredients

  • 1 lb. boneless, skinless chicken breast fillets
  • 1/4 cup plain or spicy tomato juice
  • 2 tablespoons olive oil
  • 1/4 cup dried oregano leaves
  • Pinch of red pepper flakes
  • 4 tablespoons Italian seasoned bread crumbs
  • 2 tablespoons Romano cheese

Preparation

Step 1

Cut chicken fillets into strips, about 1" wide. Put in a plastic bag and add tomato juice, oil, oregano, and red pepper. Marinate for 1 hour in refrigerator. Combine bread crumbs and cheese. Roll drained chicken in this mixture or shake in closed plastic bag. Arrange in a single layer on shallow non-stick baking pan sprayed with cooking spray. Bake uncovered in preheated very hot oven 475 degrees for about 8 minutes.
