Beef Taco Soup***

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 c chopped onion
  • 1 (28 ounce) can diced tomato
  • 1 (16 ounce) can kidney beans
  • 1 (15 1/4 ounce) can whole kernel corn
  • 1 cup tomato sauce
  • 1 cup water
  • 1 envelope taco seasoning mix
  • Salt & black pepper to taste
  • Suggested toppings: shredded cheddar cheese, sour cream, sliced green onions or chopped fresh ciloantro, tortilla chips.

Preparation

Step 1

Cook ground beef and onion in a dutch oven over medium-high heat, stirring frequently, until ground beef is browned and crumbly, about 8 minutes, drain off drippings.

Stir in undrained tomatoes, undrained beans and undrained corn. Add tomato sauce, water, seasoning mix, salt & black pepper and stir.

Simmer, stirring occasionally, for 15 minutes. Ladle into soup bowls. Serve with the toppings of your choice.
