Ingredients
- 1 lb. red potatoes, sliced (about 4 medium)
- 1 medium onion, thinly sliced and separated into rings
- 1-1/2 teaspoons salt, divided
- 1/2 teaspoon pepper, divided
- 1/4 cup all purpose flour
- 4 boneless pork chops
- 2 tablespoons vegetable oil
- 1 tablespoon all purpose flour
- 1 cup milk

Step 1
Layer potato and onion in a lightly greased 11x7x1-1/2" baking dish. Sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper, set aside.
Combine 1/4 cup flour, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper, dredge chops in flour mixture. Brown chops in hot oil in a large skillet over medium high heat. Remove chops from skillet, reserving drippings in skillet. Drain chops and set aside.
Add 1 tablespoon flour to drippings, stirring until smooth. Cook over low heat, stirring constantly, 1 minute. Gradually add milk, cook over medium heat stirring constantly until mixture is slightly thickened. Pour mixture over potato and onion, top with chops. Cover and bake at 350 degrees for 1 hour or until chops and potato are tender.
