Ingredients

  • 1 lb lean ground beef
  • 1/2 c chopped onion
  • 1 medium green pepper, chopped
  • 1-1 1/4 oz taco seasoning mix
  • 4 c -V8 juice
  • 1 c thick and chunky salsa or picante sauce
  • Toppings such as: sour cream, green onions, cheese, or shredded lettuce

Preparation

Step 1

In a 4 qt saucepan, cook ground beef with onion and green pepper over medium heat stirring until beef is no longer pink. Drain, stir in seasoning mix, and cook and stir for 1 minute. Stir in vegetable juice and salsa. Continue cooking, stirring occasionally until heated through 3-5 minutes. Spoon into bowls and put on your favorite toppings.
