Ingredients

  • 1/2 cup margarine, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp soda
  • 1 cup strawberry jam
  • 1/2 cup buttermilk
  • 1/2 cup chopped nuts, optional

Step 1

Heat oven to 325 degrees. Grease an 8 1/2 x 4 1/2 x 2 /12 loaf pan. Cream butter. Add sugar and vanilla, beat until fluffy. Add eggs, one at a time, beating well. Sift dry ingredients together. Combine jam and buttermilk. Add flour mixture, alternately with jam mixture, to butter mixture. Beat only until well blended. Stir in nuts. Pour into prepared pan. Bake for 1 1/2 hours. Cool in pan for 15 minutes then turn onto rack to cool completely.

For easier slicing, wrap and refrigerate overnight.

To sub regular milk for buttermilk, combine 1 1/2 tsp lemon juice with enough regular milk to make 1/2 cup.
