Ingredients

  • Mix:
  • 4 qt.zucc. – Cut into 3/8” chunks - peel and remove seeds
  • 6 med onions – sliced
  • 3 garlic cloves – crushed
  • 1 red pepper
  • 1 green pepper
  • Soak vegetables in ½ c salt and water and cracked ice - 3 to 4 hours
  • 3 c vinegar
  • 5 c sugar
  • 1 ½ tsp. turmeric
  • 2 T mustard seeds
  • 1 ½ tsp celery seed
  • Heat to boiling – drain vegetables and add. Simmer about 5 minutes – do not BOIL.
