Carrot Salad

  • 4 large carrots (grated)
  • 3 tbsp. lemon juice
  • 3 tbsp. oil
  • 1 tsp, sugar
  • 1 tsp. Dijon mustard
  • 1/4 tsp. pepper
  • 2 tbsp. fresh parsley
  • Salt to taste
  • Raisins if desired



Step 1

Prepare carrots.
In a bowl whisk lemon juice, oil,sugar, mustard and pepper.
Add carrots and parsley.
Toss to coat well.
Cover and refrigerate until chilled .
