Rolled Fondant

Ingredients

  • Step 1:
  • 900 grams icing sugar
  • Step 2:
  • 60 grams cold water
  • Liquid color, as desired
  • 7 grams gelatin
  • Step 3:
  • 150 grams glucose
  • 25 grams glycerine
  • 15 grams shortening
  • Clear oil flavouring, as desired
  • Step 4:
  • 25 grams shortening

Preparation

Step 1

Sift step 1 in a large bowl and make a well in the centre; set aside.

Place set 2 into a small saucepan, sprinkling the gelatin over the water. Heat until the gelatin has dissolved. Remove from heat.

Add step 3 and stir until shortening has melted. Pour mixture into the well in icing sugar. Gradually incorporate all the icing sugar into the liquid mixture-a dough like ball will form.


Knead in step 4 and knead the fondant until it is smooth and pliable. Wrap twice in plastic and store in an airtight container. Let rest a few hours before using.
