Ingredients
- 5 T. freshly grated Parmesan cheese, divided
- 1/4 c. olive or salad oil
- 2 T. fresh lemon juice
- 1 t. dry mustard
- 1/2 t. cracked black pepper
- 2 cloves garlic, minced
- Dash salt
- 10-12 c. torn salad greens
- Croutons, crumbled goat cheese, broken walnuts and/or balsamic vinegar (optional)
Preparation
Step 1
In a large salad bowl, combine 3 TABLESPOONS of the Parmesan cheese, the olive oil, lemon juice, dry mustard, pepper, garlic, and salt. Top with salad greens. If desired, add your choice of croutons, goat cheese, walnuts, and balsamic vinegar. Toss well. Sprinkle with remaining Parmesan cheese. Serve immediately.
