Beef and Noodle Barbeque Casserole

Ingredients

  • 2 lbs. ground chuck
  • 1 medium onion, chopped (1 cup)
  • 1/2 cup barbeque sauce
  • 1/2 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8 oz.) package cream cheese, softened
  • 1 (8 oz.) carton sour cream
  • 3/4 cup chopped green onions
  • 3 cups hot cooked medium egg noodles
  • 2 1/2 cups shredded Cheddar or American cheese, divided

Preparation

Step 1

Cook beef and onion in a large skillet over medium heat until beef is browned and crumbled. Drain.
Add barbeque sauce and next 4 ingredients to mixture. Bring to a boil; cover, reduce heat and simmer for 10 minutes.

Combine cream cheese and sour cream, stirring until smooth. Stir in green onions and cooked noodles.

Layer half of the noodle mixture in a greased 9 x 13-inch baking dish. Top with half the beef mixture. Sprinkle with 1 cup cheese. Top with remaining noodle mixture and remaining beef mixture. (If desired, cover and chill over night. Let stand at room temperature 30 minutes before baking.)

Cover and bake at 350 degrees for 30 minutes or until thoroughly heated. Uncover and sprinkle with remaining 1 1/2 cups cheese. Bake for 5 minutes more.
