Ingredients

  • 1 box Ready to Use 25% Less Sodium Chicken Broth (900 ml)
  • 3 cups pieces of peeled Yukon Gold potatoes
  • 2 cups pieces peeled sweet potatoes
  • 2 cups pieces unpeeled red-skinned potatoes
  • ½ cup sour cream
  • 2 T butter
  • Generous dash of fresh ground black pepper

Step 1



Heat broth and potatoes to a boil over medium-high heat. Reduce heat to medium. Cover and cook till potatoes are tender. Drain, reserving broth. Mash potatoes with ¼ cup broth, sour cream, butter and pepper. Add additional broth, if needed, until desired consistency.
