3 TBS. OLIVE OIL
1 ONION, COARSLEY CHOPPED
5 CLOVES GARLIC, CHOPPED
HOT PEPPER FLAKES TO TASTE
GRATED LOCATELLI ROMANO CHEESE

CRUMBLE SAUSAGE MEAT IN LARGE FRY PAN AND COOK UNTIL NO LONGER PINK. BREAK UP INTO SMALL PIECES.

COOK PASTA, DRAIN AND SET ASIDE IN A WARM BOWL.

TRIM ENDS FROM BROCCOLI RABE AND CUT INTO 3@ PIECES. RINSE BUT DO NOT DRY.

IN LARGE DUTCH OVEN HEAT OLIVE OIL AND SAUTE ONION AND GARLIC UNTIL LIMP (THE INGREDIENTS-NOT YOU). ADD BROCCOLI RABE AND STIR FRY ABOUT A MINUTE-UNTIL BRIGHT GREEN. ADD 1/3 CUP WATER (OR CHICKEN STOCK) , COVER POT AND SIMMER 5 TO 8 MINUTES OVER MEDIUM HEAT UNTIL TENDER.

STIR IN PASTA AND SAUSAGE PIECES. SPRINKLE WITH SALT AND PEPPER, TO TASTE. GRATED CHEESE AT TABLE.
