Fennel Soup

Ingredients

• 1 head of fennel chopped
• 2 Tb chopped onion
• 1 cup vegetable broth
• 1 cup Chicken broth
• 1/4 tsp allspice
• chopped garlic to taste
• Salt and pepper to taste.
• 1 lightly grilled chicken breast cubed.

Step 1

In small saucepan, add chopped Fennel, spices, onion, and garlic to broth, heat and simmer for 20 mins. Add cubed Chicken, and simmer until chicken has warmed through. I like to use my own homemade broths, I keep a container of each in the refrigerator. Recipes for Chicken broth and vegetable broth are available.
