Indian Sweet Rice Or Kheer
This is the Indian equivalent to rice pudding. It is creamy and delicious. If you are making this for a party it can be made ahead and refrigerated.
- 1/2 cup rice
- 2/3 cup water
- 71/2 cups milk
- 3/4 cup sugar
- 2 cardamom pods
- 1 tablespoons toasted almonds, coarsely chopped
- 1/3 cup raisins
Preparation time 40mins
Cooking time 80mins
Soak the rice in 1/2 cup water for 30 minutes. Then boil the rice in the water until all the water dries up. Remove pot from the heat.
Add the milk and cardamom pods to the rice and stir well. Simmer on low heat for 11/2 hours, stirring occasionally to ensure rice does not stick to the bottom and sides of the pan. At this point the rice will be of a creamy consistency.
Now add the sugar stirring constantly over low heat until the sugar is dissolved and the rice is creamy.
Remove from the heat, remove the cardamom pods. Serve in individual bowls garnished with toasted almonds and raisins.
