Roast with Red Gravy

Ingredients

  • 2-3 lb. Eye of Round Roast
  • 3 garlic cloves
  • 2 Tbs. vegetable oil
  • 1 onion, chopped
  • 2 Tbs. Italian Seasoning
  • 2 cans tomato sauce (15 oz. cans)
  • 1/2 cup water
  • 1/2 cup bell pepper, chopped
  • salt and pepper to taste

Preparation

Step 1

Stuff roast with garlic and salt and pepper roast. Brown in oil in dutch oven until all sides of roast are browned. Remove meat. Cook onions and bell pepper until tender. Add tomato sauce, water and Italian seasoning. Stir until mixed well and return meat to pot. Simmer covered about 2-3 hours, turning meat occasionally.
