Openface Crab Muffins

Ingredients

  • 3/4 cup low-fat cottage cheese, blended
  • 1/4 cup Parmesan cheese
  • 1/3 cup green onions, finely chopped
  • Tabasco sauce to taste
  • 2 teaspoons of Worchester sauce
  • 12 ounces imitation crab, shredded
  • 6 English muffins split in half or substitute rice cakes

Preparation

Step 1

1. Mix blended cottage cheese, Parmesan cheese, green onion, Tabasco or Worchester sauce together in a mixing bowl.
2. Stir in imitation crab.
3. Spread 1/4 cup craft mixture on each muffin half.
4. Place on cookie sheet and bake at 400°F for 10 to 12 min.
