Ingredients

  • 1/4 tsp canola oil
  • 1/4 chopped garlic
  • 1/4 C each: finely diced carrots, red pepper, celery, onion
  • 1 pd 90% lean ground beef
  • 1/4 shredded parmesan
  • 1/4 C low-sodium chicken broth
  • 1 lg egg
  • 1 C cooked brown lentils
  • 2 C packed spinach leaved
  • steamed, drained, and chopped
  • cooking spray

Preparation

Step 1

Preheat over 350'
heat oil - add garlic, all vegetables except spinach and saute for 4 minutes.
In large bowl, break up beef well, stir in cooked vegetables, parmesan, broth, egg & lentils. then spinach.
Season with salt and pepper
coat 3x8 loaf pan with cooking spray.
bake 35 minutes
