Smoked Turkey

Ingredients

  • Turkey
  • salad oil
  • 1/2 cup salt
  • 1 cup vinegar
  • 1/4 cup pepper
  • 2 tab. chopped parsley

Preparation

Step 1

Rinse Turkey and pat dry. Make a paste with 1/4 cup of oil and salt, rub inside turkey.

Place drip pan and water pan for moisture. Roast with hood down for approximately 1 hour.

Combine all ingredients and brush on turkey. Add hickory chips (wet). Roast with hood down for 3-4 hours, Baste every 30 minutes, checking fire and chips.
