Ingredients

  • 1 cup(s) fat free egg substitute
  • 2 cup(s) chopped frozen spinach
  • 3/4 cup(s) shredded part-skim mozzarella cheese
  • 1 tsp table salt
  • 1/4 tsp black pepper
  • Additional chopped veggies, if wanted

Preparation

Step 1

Drain spinach well. Mix all ingredients together. You can add additional chopped veggies. Pour into parchment paper muffin cups. Bake at 350 degrees for 20-25 minutes. These freeze well.
