Ingredients
- 3/4 c. dried cherries, coarsely chopped
- 2 Tbs. orange liqueur
- 1 Tbs. water
- 2 c. flour
- 1 Tbs. baking powder
- 1/2 tsp. salt
- 1/4 c. sugar
- 1 egg
- 1 c. milk
- 4 Tbs. melted margarine
Preparation
Step 1
Place dried cherries, liqueur and water in small oven-proof container. Cover with foil and place in hot oven for 5-10 minutes so cherries puff up and absorb liquid. Stir once or twice and set aside.
Sift together flour, baking powder, salt and sugar. In separate bowl, beat together egg, milk and melted margarine. Fold in dry ingredients quickly, then stir in cherries. Spoon into paper-lined muffin cups, filling each 2/3 full. Bake in 375 oven for 20-25 minutes. Makes 12.
