Twice Baked Potato Casserole

Ingredients
- 1 carton of mashed potatoes or 4 c. of home made mashed potatoes*
- 1/2 c. sour cream
- 2 T. bacon bits
- 1 c. grated cheese ( I use the Mexican shredded cheese)
- 1-2 T. chives or finely chopped green onion, mostly green part

Preparation
Step 1
Mix all together and put in a casserole dish. Preheat oven to 350 degrees. Bake for 30 min or until top begins to brown.
I have found the homemade mashed potatoes tend to be drier so make sure you make them a little on the "soupy" side. Also, sometimes I add 1-2 T. green chilis.
