Spanish Potatoes

Ingredients

  • 1 1/2 lbs small new potatoes
  • 5 tbsp olive oil
  • 2 garlic cloves, sliced
  • 1/2 tsp crushed red pepper
  • 1/2 tsp ground cumin
  • 2 tsp paprika
  • 2 tbsp red or white wine vinegar
  • 1 red or green bell pepper, sliced
  • coarse salt

Preparation

Step 1

Cook potatoes w/skin in a saucepan of boiling salted water until almost tender, drain & cut into chunks

heat the olive oil in a large skillet & fry the potatoes, turning the frequently, until golden
meanwhile, crush the garlic, crushed red pepper & cumin in a mortar, mix w/paprika & vinegar to form a thick paste.

add the garlic mixture to the potatoes w/the sliced bell pepper & cook, stirring for 2 minutes, sprinkle w/coarse salt, serve
