Wild Rice Soup

Ingredients

  • 3 T Butter
  • 2 T Onion, finely chopped
  • 3/4 C Flour
  • 5 15 oz. cans of chicken broth
  • 3 C Wild Rice, cooked
  • 2 C Half and half
  • 3 T Cooking sherry (optional)
  • 1/2 C Ham, diced
  • 1/2 C Carrots, grated
  • 4 T Slivered almonds
  • 1 lb. Mushrooms, sautéed

Preparation

Step 1

1. Sauté onion in butter. Whisk in flour until smooth. Gradually add broth.

2. Cook, stirring constantly, until mixture slightly thickens.

3. Stir in rice, ham, carrots, almonds and mushrooms. Simmer 1-2 hours.

4. Blend in half and half and sherry. Heat to serving temperature.
