Ingredients
- 20 oz can crushed pineapple
- 1 cup milk
- 1 loaf raisin bread
- 1 cup raisins
- 1 cup brown sugar
- 2 Tbsp butter
- 2-3 Tbsp rum
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 Tbsp butter
- 2-3 Tbsp rum
- 2-3 Tbsp brown sugar
- 1/4 cup sliced almonds
Preparation
Step 1
Combine pineapple, milk and bread and let sit 10 minutes. Stir in raisins, brown sugar, butter, rum, vanilla and cinnamon and pour into lightly greased 9x13 pan. Melt butter. Add rum and sugar and stir until sugar is just dissolved. Spoon onto pudding. Bake for 25 min at 350° F. Top with almonds and bake another 15-20 min or until top is golden and beginning to turn crusty. Serve warm with brown sugar sauce or warmed caramel sauce.
