Ingredients
- 4 lbs fava beans in the shell or 2 lbs shelled
- 1/2 c. chopped red pepper
- 1/2 c. chopped red onion
- 1/4 chopped herbs such as parsley, basil or whatever you like in any combination
- 2 tbls. olive oil
- 1 tbl. lemon juice

Step 1
1) Shuck fava beans if necessary
2) Bring a pot of water to a boil, add beans and cook 2 - 3 minutes, remove from heat & refresh in ice water to stop the cooking
3) Peel the whitish outer 'skin' from the bean
4) Combine all ingredients, season with salt and pepper to taste and serve
