Pasta Salad with Vegetables

Ingredients

  • Salt
  • 1 1/2 1 ½ lbs. Bow tie pasta
  • Olive oil
  • Pepper
  • 1 1/2 1 ½ lbs. Sweet Italian sausage
  • 1 large eggplant, sliced width wise into 1/8 inch thick slices
  • 2 medium zucchini, sliced lengthwise into 1/8 inch thick slices
  • 1 1/2 1 ½ pints cherry tomatoes, halved
  • 1 1/2 1 ½ cups basil leaves, torn

Preparation

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook al dente, drain and transfer to a large serving bowl. Drizzle with oil and sprinkle with salt and pepper.
Grill the sausage, eggplant, and zucchini until cooked through, about 5 minutes per side. Transfer to a chopping board; finely chop the sausage and vegetables. Add the mix to vegetables and toss to combine. Add tomatoes and basil- drizzle with oil and toss together once more. Season with salt and pepper.
