Ingredients

  • 1 1/3 cups flour
  • 1 cup quick oats
  • 1/2 cup packed brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • 1 large egg
  • 1/4 cup Canola oil
  • 1/2 cups fat free vanilla yogurt
  • 1 can crushed pineapple
  • 1/2 cup grated carrot OR add 1/2 cup pinapple chunks

Preparation

Step 1

Preheat oven to 400F. Spray muffins cups with nonstick cooking spray.

Combine first 7 ingredients; make a well in the center. Mix the next 5 ingredients in a small bowl; add to first mixture; stir just until moistened. Fill muffin cups 3/4 full; bake for 20 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan.
