Chorizo Recipe from La Palmera

Ingredients

  • 10 lb. ground pork
  • 2 Tbsp. salt
  • 2 Tbsp. garlic salt
  • 1 Tbsp. garlic, minced
  • 1/2 Tbsp. ground oregano
  • 3 Tbsp. Mexican oregano
  • 2 Tbsp. pepper
  • 1 tbsp. cayenne pepper
  • 7 Tbsp. paprika
  • 1/4 Tbsp. cloves
  • 1 cup white vinegar
  • 2 cups oil

Preparation

Step 1

Knead until well mixed.

Refrigerate 24 hours.

Form into a brick and cut into portions.

Wrap in film, then foil.

Will last a long time in the freezer.
