Ingredients
- 4 Tbsp dried cranberries
- 2 Tbsp hot water
- 1 tsp olive oil
- 1 clove(s) garlic clove(s), minced (medium)
- 1 bunch(es) spinach
- 2 Tbsp pine nuts, toasted
- 1/4 tsp table salt
- 1/4 tsp black pepper
Preparation
Step 1
In a small microwavable bowl, plump raisins with hot water on high heat for 30 seconds.
In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.
Toss with cranberries, nuts, salt and pepper. Serve immediately.
