Ingredients

  • 3 c lentils, washed
  • water
  • 1 tbsp evoo
  • 2 large onions, chopped
  • 6 large carrots
  • 4 garlic cloves, minced
  • 1 1/2 tsp sea salt
  • 1 tsp black pepper
  • 1 tbsp tamari soy sauce
  • 6 oz tomato sauce
  • 2 pounds kale ( 2 bunches)

Preparation

Step 1

in large pot, add washed lentils and 8 1/2 c water, stir, cover and simmer for 30+ minutes until the lentils are soft, but not mushy.
heat a pot over mediium-high heat and add oil. add onion and saute for 5 minutes. add carrots and saute another 7 minutes. add garlic and cook another 2 minutes. stir in sea salt, black pepper, soy sauce and tomato paste. add cooked lentils and turn heat to low.
prepare kale: wash, cut leaf from stems and discard stems. chop the leaves.
add chopped leaves to lentils and cook until wilted, 4 minutes.

can use collards instead of kale.
