COTTAGE PUDDING

(Shortcake for Strawberries)

(A fellow teacher of Peg's at Lakeland Junior High, Kevin Beuret, shared this recipe with Peg. It was his Aunt Agnes’ recipe that she used as a shortcake in strawberry season.)

Ingredients

• Cream together:
• 1/2 c. sugar
• 1/2 tsp. salt
• 1/4 c. margarine
• Mix in:
• 1/2 c. milk
• 1 egg
• Sift and add:
• 1 1/2 c. flour
• 2 tsp. baking powder

Preparation

Step 1

Pour in greased 8-inch square pan. Bake at 350º for 20 minutes. Cut in squares and serve with sweetened strawberries, half and half, and whipped cream.
