smoked sausage with rice

Ingredients

  • 2 tbsp butter or margarine
  • 1 pkg. smoked sausage
  • 1 pkg. instant chicken flovored rice
  • 1 onion, chopped
  • 1 red oeooer, chopped
  • 2 cups frozen peas
  • 1/2 cup green olives, halved
  • salt and pepper to taste

Preparation

Step 1

melt butter in a 4-5 qt saucepan over medium high heat, add sausage, rice, onon and peppers. cook and stir until sausage is lightly browned and veggies are soft. stir in 2 cups of water and seasoning packet ; bring to a boil over high heat. cover and reduce heat to low and simmer 10 minutes. stir in peas. cover and simnmer 110-12 minutes or until most of the liquid is absorbed and rice is tender. add olives, salt and pepper to taste . serve immediately.
