Ingredients
- 1/4 lb bacon
- 1 medium onion diced
- 2 small carrots coarsely grated
- 3 c boiling water
- 1 t salt
- 6 medium potatoes cubed
- 1/4 c margarine
- 1/2 c flour
- 1/2 t salt
- 1/8 t pepper
- 3 c milk
- 1 can corn
Preparation
Step 1
Fry bacon till crisp, set aside. Saute onion and carrot in bacon grease. Do not drain. In large kettle add salt, wate, potatoes, onions,carrots, and bacon grease. Cook 25 min. or till tender. do not drain. Melt marg. in kettle add flour, salt and pepper. blend well; stir in milk gradually, stir till thick. Add corn and white sauce to potato mixture. add crumbled bacon just before serving.
