Honeyed mango chicken with toasted cashews

  • 3 T. peanut oil
  • 2 T. soy sauce
  • 1 T. honey
  • 6 boneless, skinless chicken thighs
  • 1 C. salted cashews
  • 3 garlic cloves, thinly sliced
  • 1/4 C. md. yellow onion, chopped
  • 1 C. mango, chopped

Step 1

1) in ziploc, mix 2 T. of the oil, soy sauce and honey til well combined. add chicken, toss to coat well. marinate in refrigerator at least 30 minutes and up to 2 hours.

2) meanwhile, heat large skillet over md. high heat and add cashews. toast, shaking pan a few times for about 2 minutes. set side to cool.

3) when chicken is ready, heat remaining T. oil in large skillet over md. heat. add garlic and onion; cook til soft, about 2 minutes. add chicken and marinade and cook, stirring occasionally., until chicken is browned and cooked thru, about 6 minutes. stir in mango and cshews and cook til heated thru, about 1 minute.
