Ingredients
- Ingredients:
- 5 large tomatoes
- 1 yellow squash
- 1 zucchini
- 1/2 red onion
- 1 green bell pepper
- 1 package sliced mushrooms [Optional]
- 2 cloves minced garlic
- 1 carrot
- Small can (about 6 oz.) tomato paste
- Whole wheat or whole grain rotini [You can use other pasta, but the sauce really sticks to the rotini shape the best.]
- A tiny bit of salt to taste.
Preparation
Step 1
(1) Chop up all of the veggies but the carrots and mushrooms.
(2) Shred carrots on a cheese grater or in a food processor.
(3) Cook all ingredients but pasta in a pot over low heat for at least 30 minutes, stirring occasionally.
(4) Cook the pasta according to label directions, drain, and serve with the sauce.
