Fried Onion Rings

Ingredients

  • Batter:
  • 1 large Bermuda onion (1/4 pound)
  • 1 cup sifted all-purpose flour
  • 2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 1 egg yolk
  • 2/3 cup milk
  • 1 tablespoon salad oil
  • 1 egg white
  • Shortening or oil for deep-fat frying

Preparation

Step 1

Peel onion; slice about 1/4 inch thick; separate into rings. Cover with cold water, and let stand 30 minutes. Drain, and spread out on paper towels.

Meanwhile, make Batter: Sift flour, salt, and baking powder into medium bowl; set aside.

Beat egg yolk slightly in bowl; then stir in milk and salad oil. Add to flour mixture, stirring until until smooth.

Heat 1 inch of melted shortening in saucepan or skillet to 375 degrees on deep-frying thermometer.

Dip onion rings in batter (let excess batter drip into bowl); drop several rings at a time into hot fat, and fry until golden. Drain on paper towels. Keep warm while frying rest.
