Vincenzo's Tortellini Buddeke

Ingredients

  • 2 teaspoons clarified butter
  • 2 teaspoons diced prosciutto
  • ½ cup sliced mushrooms
  • 1 cup heavy cream
  • 1½ cups tortellini
  • 2 tablespoons butter
  • Parmesan cheese
  • 2 tablespoons marinara
  • 2 teaspoons chopped parsley

Preparation

Step 1

Heat clarified butter in sauté pan over medium heat. Add diced prosciutto and sliced mushrooms. Sauté, stirring, until mushrooms are tender, the fat from the prosciutto is rendered and the prosciutto begins to crisp. Add heavy cream, bring to a boil and reduce heat to simmer. Then add tortellini, and cook until soft and tender. Finish with butter and Parmesan cheese. Place on plate, and top with marinara sauce and chopped parsley.
