  • two to three eggplants
  • 32 oz sauce
  • 8 oz Mozzarella
  • ricotta
  • 1 egg 2 egg whites
  • parsley
  • oregano
  • pepper

Preparation

Step 1

Slice eggplants lengthwise, spray with cooking spray and broil or bake them

mix ricotta, eggs, herbs and 1/2 mozzarella

spray 9 x 13 pan and layer sauce, eggplant then cheese.
then eggplant, cheese, eggplant then sauce.
top with cheese, cover with foil.

cook 40 - 60 min at 350
