Biscuits: Buttermilk Biscuits

Ingredients

  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 2 teaspoonss baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 tablespoons shortening
  • 1 cup plus 2 TBSP lowfat buttermilk

Preparation

Step 1

1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or nonstick baking spray.

2. In a large bowl, mix together the flours, baking powder, and
baking soda.

3. Using your fingertips, a pastry blender, or two knives, cut the shortening into the flour mixture until the shortening is thoroughly incorporated. Create a well in the center of the flour and pour in the buttermilk. Mix by hand or with a spatula just until moistened. Do not overmix the batter; it will appear slightly loose.

4. Drop tablespoonfuls of batter evenly spaced apart onto the prepared baking sheet.

5. Bake 12 to 15 minutes or until the tops are dry and bottoms are lightly browned.
