Chicken Rice Soup - 3 in 1

The base for each of these three soups is 2 cans of canned condensed Chicken Rice Soup.

Ingredients
- First choice:
- 2 cans Chicken with Rice Soup; then one of these choices
- peas and carrots
- 1 1/2 cups cooked chicken
- 2 Tbsp parsley or dill
- Second choice:
- 8 oz Raw Shrimp cleaned and split lengthwise
- 2 Tbsp lemon juice
- 1/4 tsp chili oil or hot pepper sauce
- 1/4 c. chopped fresh cilantro
- Third choice:
- 1 - 15 oz can black beans
- 1 cup canned crushed tomatoes
- 4 oz can chopped green chilis
- 1/2 tsp cumin
- Tortilla Chips
Preparation
Step 1
First choice
Bring soup to boil. Add peas and carrots; simmer 8 minutes until tender. Stir in chicken and parsley or dill.
Second choice
Gently simmer soup. Add shrimp, cook for one minute. Remove from heat and stir in lemon juice, pepper choice and cilantro
Third choice
Add all ingredients except chips to soup. Cook until hot. Top with chips.
