Kentucky Crumbed Chicken
Once you've made these delicious, lightly spiced, baked chicken strips, you'll never want fried chicken fingers again. These have a satisfying crunch and simply nowhere near the fat content of fried chicken.

Ingredients
- 4 skinless, boneless chicken breast halves (1 1/2 lbs total)
- 1/2 cup light mayonnaise
- 1 tsp salt free seasoning blend
- 1 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp poultry seasoning
- 1 1/2 cups crushed whole wheat crackers
- 1 cup barbecue sauce
Preparation
Step 1
1. Preheat the oven to 400°F. In a large bowl, stir together mayonnaise, seasoning blend, salt, garlic powder, onion powder and poultry seasoning.
2. Cut chicken breast into 1 inch wide strips. Toss chicken strips in seasoned mayonnaise.
3. Place cracker crumbs in pie plate. Roll chicken strips in crumbs to coat and place 1/2 inch apart on ungreased baking sheet.
4. Bake 18-20 minutes, turning chicken strips over halfway through cooking time. Serve immediately with barbecue sauce on the side.
