Garlic Stuffed Potatoes

Ingredients

  • 5-6 Russet/Bakers Potatoes
  • 3 cloves Garlic (fresh, minced)
  • 2 tbsp. Sour Cream
  • 2-3 tbsp. butter
  • Instant mashed potatoes (cooked-4 serving)
  • Cheddar & Mozzarella Cheese (shredded)

Step 1

Wash potatoes. Poke (in 2 spots only) with fork. Cook directly on rack in oven til done (approx. 1 hr.) While still hot/warm, cut in half horizontal. Scrape out potato leaving skins in tact. Set skins to the side. Mash potato and add butter, garlic, sour cream and cooked instant potatoes (may add a little milk if required). Whip till smooth. Re-stuff potato shells with mixture (should be heaping) and top with shredded cheese. Broil till brown (approx 5 min).
