Senate Bean Soup

Ingredients

  • 1 1/2 cups dry Idaho Great Northern beans
  • 1 smoked ham hock
  • 1 medium potato, finely chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 clove garlic, minced
  • salt and pepper to taste
  • garnish: parsley, chopped

Preparation

Step 1

Soak beans overnight in 1 quart of water. Drain beans and measure water, adding enough water to make 2 quarts. Place beans, water and ham hock in kettle. Cover and simmer for 2 hours. Add potato, onion, celery and garlic. Simmer 1 hour. Remove ham hock and cut up meat. Remove 1 cup fo beans and some liquid and puree in blender. Return meat and beans to soup. Heat. Season to taste. Garnish.
