Shrimp Salad-Stuffed Avocados

Ingredients

  • 1/2 pound deveined peeled cooked medium shrimp, coarsely chopped
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 3 Tbsp. mayonnaise
  • 4-1/2 tsp. capers, drained
  • 1 Tbsp. minced fresh parsley
  • 2 tsp. Dijon mustard
  • 1-1/2 tsp. lemon juice
  • 3/4 tsp. dried tarragon
  • 1/4 tsp. seasoned salt
  • 1/8 tsp. pepper
  • 2 medium ripe avocados, halved and pitted

Preparation

Step 1

In a small bowl, combine the first 11 ingredients. Spoon into the avocado slices. Serve immediately.
