Fresno Apricot Bar

Ingredients

  • 2/3 c dried apricots
  • 1/2 c butter at room temp.
  • 1/4 c white sugar
  • 1 1/3 c flour, sifted , divided
  • 1 c brown sugar
  • 2 eggs, well beaten
  • 1/2 t baking powder
  • 1/4 t vanilla
  • 1/2 c walnuts, chopped

Preparation

Step 1

Coer apricots with waterin saucepan and simmer uncovered for 10 minutes. Drain and cool.

Mix butter with white sugar and 1 cup of flour. Blend with your hands of a fork until mixture is crumbly. Lightly grease 8 in pan. Press cumbly mixture into bottom of pan. Bake 350* for 25 minutes.

While this is baking, in a large bowl, add brown sugar tp beaten eggs and beat together till well blended. In a seperate bowl, sift remaining flour, baking powder, and salt together. Chop apricots coarsely and add to egg mixture, along with flavoring, nuts, and flour mixture.

When bottom crust is done, spread apricot mixture over it. Return pan to oven and continue baking for an additional 25 minutes. Cool pan on rack. Cut into squares or bars.
